Chocolate Slice {with peanut butter chunks}



Last week I really had the urge to make something with sprinkles. My favourite sprinkly baked item would have to be vanilla cupcakes with soft buttery frosting. The kind where every inch of frosting is covered with sprinkles. Yum! However, time escaped me so I whipped up this quick and easy Chocolate Slice {with peanut butter chunks}.

Ingredients:
1 1/4 cups gluten free S.R flour
2 tbsp cocoa
3/4 cup coconut
1/2 cup caster sugar
120g nuttelex, melted
1 egg, lightly beaten
1 heaped tbsp peanut butter

Icing:
1 cup icing sugar
1 tbsp cocoa
Vanilla
Hot water
Sprinkles

Method:
1. Set oven to 200c and line a baking tray with greaseproof paper.
2. Mix flour, cocoa, coconut and caster sugar together in a bowl.
3. Add melted butter and lightly beaten egg to dry ingredients. Mix well.
4. Press mixture into tin. Place small chunks of peanut butter on the top of the slice. Lightly press into the mixture.
5. Bake for 10-15mins.
6. When cool, remove slice from tin.
7. To make the icing, combine the icing sugar and cocoa in a bowl. Add vanilla essence and enough hot water to make a thin paste. Pour over slice.
8. Add sprinkles before the icing sets.
9. Cut into squares when icing is set and keep in the refrigerator.
